Rice with vegetables and peanuts


(4 servings)

3 cups chopped chicken
2 tablespoons peanut butter
1 ½ cup rice
Chicken soup
3 tablespoons peanut oil
1/2 red pepper, julienned
1/2 green pepper cut into strips
3 green onions, chopped
1/2 teaspoon garlic salt
1/2 cup chopped peanuts


Place the chicken and peanut butter in a large skillet over medium heat. Cook, stirring with a wooden spoon until butter is dissolved. Add rice, broth and boil. Cover, reduce heat and simmer until rice is ready. Besides, place the peanut oil in a skillet over medium heat; add julienned peppers, green onions, and saute until the vegetables are tender. Sprinkle with garlic salt.
Serve the sauteed vegetables over rice and sprinkle with chopped peanuts.
