Chicken peanut salad


(4 servings)
400 gr. cabbage
400 gr. chicken breast
200 gr. shredded carrots
1/2 cup fresh basil
1 red pepper
1 green pepper
1 garlic clove, roughly chopped
1 cup of tuna
1/2 cup of roasted peanuts, roughly chopped
vegetable oill, salt & pepper



Blanch the cabbage leaves in boiling water for 3 minutes and rinse immediately in cold water. Cut the leaves into thin strips. Cook chicken and cut into strips. Mix in a bowl the cabbage, carrots, chicken, chopped peanuts, basil, peppers, garlic and tuna. Season with oil, adding salt and pepper to taste.
