Mexican Soup


(4 servings)

1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, minced
2 bowls of boiled chicken cut into pieces
3 cups peeled tomatoes, diced
1/2 cup diced green peppers
1/2 cup peanut butter
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup heavy cream
2 tablespoons chopped cilantro or parsley
1/4 cup chopped peanuts


Heat the oil in a saucepan over medium heat. Add onion and garlic; saute until onion is transparent. Add the chicken, tomatoes, peanut butter, salt and pepper. Cook, stirring occasionally, until peanut butter is melted. Add the cream, stir well and continue cooking until all the preparation is hot. Serve in bowls and sprinkle with cilantro and chopped peanuts.
